Casentino is a land full of tradition. From the gastronomy to the hand-made products. The Casentino's dishes are bound to the ancient countryside civilization: acquacotta, scottiglia, tortelli with potatoes or buttermilk curd and the production of cheeses and of typical salted meats (smoked with juniper wood) are prepared with ingredients produced by the earth. The honey of the High Casentino is particolarly famous (more famous is the Honey-dew of Fir) and of excellent quality are the spontaneous fruits of the brushwood: boletus and chestnuts. The handicraft of Casentino bases itself on the workmanship of simple elements: wood, stone, iron and wool. The workmanship of the wood has constituted one of the principal handicrafts activity over the centuries and very famous is the "Casentino Cloth", in the traditional orange and green colors. Wrought-iron workmanship gave rise to the "National Biennial Exhibition of Metalwork" at Stia, and that of the stone to the annual show at Castel S. Niccolò.
